This banana bread is a revelation. I love it so much. No decadence is sacrificed for the "Crunchy Hippie" elements of this recipe. The flavour is so deeply nutty and banana-tastic. It really stands out among banana bread recipes that are a lot of the same. I didn't have sunflower seeds so I omitted them and just sprinkled a bunch of pumpkin seeds on top. It was a solid choice. Reducing the bananas involved a lot of splattering, but was otherwise painless. I was impatient to finish the recipe and spread the mash out on a sheet pan to cool more rapidly. It really does stay moist for about a century, but it won't last that long with hungry housemates around. Thanks for the excellent variation on a classic favourite! It makes banana bread interesting again.
I always use overripe frozen bananas when I make banana bread. I discovered this by chance some years ago and have not used just “regular ripe bananas” since then, but will definitely try the banana mash next time😁
